S’mores Brownie Pie

A cozy baked version of the classic s’mores, featuring layers of brownies, chocolate, and gooey marshmallows.


Ingredients

  • 1/4 cup granulated sugar
  • 6 tablespoons unsalted butter, melted
  • 1/2 cup unsalted butter
  • 2 tablespoons vegetable oil or melted coconut oil
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 egg yolk, at room temperature
  • 2 teaspoons pure vanilla extract
  • 3/4 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1 cup semi-sweet chocolate chips
  • 24-25 large marshmallows


Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9-inch pie dish.
  2. Combine graham cracker crumbs, 1/4 cup sugar, and melted butter. Press into the pie dish to form crust.
  3. In a bowl, melt 1/2 cup butter. Mix in oil and 1 cup sugar. Add eggs, egg yolk, and vanilla extract; whisk until smooth.
  4. Sift in cocoa powder, flour, and salt. Stir until just combined. Fold in chocolate chips.
  5. Pour brownie batter into crust and spread evenly. Bake for 30 minutes.
  6. Remove pie and top with marshmallows. Bake for 3 more minutes or broil until golden brown—watch closely.
  7. Let cool for 45 minutes to 2 hours. For clean slices, use a hot knife.

Notes

Ensure graham cracker crumbs are finely crushed for a sturdy crust. Rotate the pie while broiling for even golden marshmallows.
