Description

A comforting dish of garlic roasted potatoes paired with creamy baked feta, perfect for a weeknight meal.


Ingredients

  • 2 pounds small potatoes, halved
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 1 block feta cheese
  • 1 teaspoon dried oregano
  • Fresh parsley, for garnish


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss the halved potatoes with minced garlic, olive oil, salt, and pepper until well coated.
  3. Spread the potatoes on a baking sheet in a single layer.
  4. Place the block of feta in the center of the baking sheet and sprinkle with dried oregano.
  5. Roast in the oven for 25-30 minutes, or until the potatoes are golden and fluffy.
  6. Remove from the oven and let cool slightly.
  7. Garnish with fresh parsley before serving.

Notes

For a deep, crisp edge, give the potatoes more space on the baking sheet. To prevent the garlic from burning, add it halfway through roasting.
