Description

A quick and comforting one-pan meal featuring buttery beans simmered in fragrant curry and creamy coconut milk.


Ingredients

  • 1 can butter beans, drained and rinsed
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon curry powder
  • 1 can coconut milk
  • Salt to taste
  • Fresh cilantro for garnish


Instructions

  1. Heat the olive oil in a pan over medium heat. Add the chopped onion and sauté until translucent.
  2. Stir in the minced garlic and curry powder, cooking for another minute until fragrant.
  3. Add the butter beans and coconut milk, stirring to combine.
  4. Season with salt and bring to a simmer.
  5. Cook for about 5-10 minutes until the mixture is heated through and thickened.
  6. Serve warm, garnished with fresh cilantro.

Notes

For a creamier result, lightly mash some of the butter beans. This dish keeps well for leftovers and flavors deepen overnight.
