Description

Quick and easy cinnamon apple bites made with cottage cheese, oats, and a hint of sweetness, perfect for a comforting snack or breakfast.


Ingredients

  • 1 cup cottage cheese
  • 1 cup rolled oats
  • 1/2 cup applesauce or 1 small grated apple
  • 1 large egg
  • 1/2 tsp cinnamon
  • 1 tbsp honey or maple syrup (optional)
  • 1/2 tsp baking powder
  • Pinch of salt


Instructions

  1. Preheat your oven to 350°F (175°C) and grease a mini muffin pan or line it with mini muffin liners.
  2. Combine cottage cheese, oats, applesauce or grated apple, egg, cinnamon, honey or maple syrup, baking powder, and salt in a mixing bowl. Mix until well combined.
  3. Allow the batter to sit for 5 minutes to let the oats absorb some moisture.
  4. Scoop the mixture evenly into the mini muffin pan, filling each cup almost to the top.
  5. Bake for 18-20 minutes or until the bites are set and lightly golden on top.
  6. Let the bites cool in the pan for a few minutes before transferring to a wire rack to cool completely.
  7. Enjoy warm or store in the fridge for up to 4 days.

Notes

For best texture, let the batter rest for five minutes. You can customize the bites with nuts or spices based on your preference.
