Description

A comforting and easy one-skillet meal featuring ground beef, rice, cheese, and taco flavors.


Ingredients

  • 1 pound ground beef
  • 1 can Rotel tomatoes
  • 2 cups fluffy rice
  • 2 cups shredded cheese (cheddar or a blend)
  • 1 packet taco seasoning
  • 2 cups water or beef broth
  • Salt and pepper to taste
  • Chopped cilantro (optional, for garnish)


Instructions

  1. In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
  2. Stir in the taco seasoning and Rotel tomatoes, cooking for a few minutes until heated through.
  3. Add the rice, water or beef broth, and season with salt and pepper. Bring to a boil, then reduce heat to low and cover. Cook for about 20 minutes, or until rice is tender and liquid is absorbed.
  4. Remove from heat and stir in the shredded cheese until melted.
  5. Serve hot, garnished with chopped cilantro if desired.

Notes

For best results, let the beef brown well and taste the cooking liquid before covering. Adjust flavors as needed.
