- 2 cups all-purpose flour
- 1/2 cup unsalted butter, softened
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup brown sugar filling
- 1 cup powdered sugar (for glaze)
- 1 teaspoon cinnamon (for glaze)
- 2 tablespoons milk (for glaze)
Instructions
- Preheat your oven to 350°F (175°C).
- Cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
- Beat in the egg and vanilla extract.
- Whisk together the flour, baking powder, and salt in another bowl.
- Gradually add the dry ingredients to the wet mixture, mixing until combined.
- Roll out the dough on a floured surface to about 1/4 inch thick.
- Cut into rectangles and place half of them on a baking sheet lined with parchment paper.
- Place a small spoonful of brown sugar filling in the center of each rectangle on the baking sheet.
- Top with another rectangle and seal the edges with a fork.
- Bake for 12-15 minutes or until lightly golden.
- Whisk together the powdered sugar, cinnamon, and milk until smooth for the glaze.
- Drizzle the glaze over the baked cookies.
- Let cool before serving. Enjoy your nostalgic treat!
Notes
You can make the dough a day ahead. Freezing is also an option, but freeze the finished, unglazed cookies.
