Ingredients

- 1 cup plain full-fat yogurt
- 1 small clove garlic, minced
- Juice of 1/2 lemon
- 4 large eggs
- 1 tablespoon white vinegar (optional)
- 2 tablespoons unsalted butter
- 1 teaspoon sweet paprika or 1/2 teaspoon Aleppo pepper
- Salt and black pepper to taste
- Fresh dill or chopped chives, for garnish
- Crusty bread or toasted pita, for serving
Instructions
- In a bowl, whisk together yogurt, minced garlic, lemon juice, and a pinch of salt.
- Bring a wide pot of water to a gentle simmer and add vinegar if using.
- Crack eggs into a cup and carefully slide them into the water, poaching for 3-4 minutes until the whites are set.
- In a skillet, melt butter over medium heat until foamy, then stir in paprika or Aleppo pepper for 20 seconds.
- Spoon the yogurt mixture into shallow bowls, add poached eggs on top, and drizzle with spiced butter.
- Season with salt and pepper, and garnish with fresh herbs. Serve with crusty bread or pita.
Notes
You can prepare the yogurt mixture ahead of time and store it in the fridge. This dish can also be served as a DIY bar for gatherings.
