- 1 ½ cups fresh or frozen strawberries, hulled
- ¼ cup granulated sugar (for sauce)
- 1 tablespoon lemon juice
- 1 tablespoon cornstarch mixed with 1 tablespoon water
- 1 ½ cups graham cracker crumbs
- ⅓ cup granulated sugar (for crust)
- ½ cup unsalted butter, melted
- 24 ounces (3 blocks) cream cheese, softened
- 1 cup granulated sugar (for filling)
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 cup sour cream
- ¼ cup heavy cream
Instructions
- In a small saucepan, combine hulled strawberries, ¼ cup sugar, and lemon juice over medium heat.
- Once softened (5-7 minutes), mash the strawberries into a purée and stir in the cornstarch slurry to thicken. Allow to cool completely.
- Preheat oven to 325°F (160°C). Mix graham cracker crumbs, ⅓ cup sugar, and melted butter until resembling wet sand. Press into a 9-inch springform pan.
- Bake crust for 8-10 minutes until lightly golden.
- Beat softened cream cheese and 1 cup sugar in a large bowl until smooth (2-3 minutes). Add eggs one at a time. Then mix in vanilla extract, sour cream, and heavy cream until just blended.
- Pour the filling onto the cooled crust, smooth the top, and drop spoonfuls of cooled strawberry sauce on top. Swirl with a knife.
- Place the springform pan inside a larger baking dish, fill with 1-2 inches of hot water to create a water bath. Bake for 55-65 minutes until edges are set, but center jiggles slightly.
- Turn off oven, crack door open, and cool for 1 hour. Then refrigerate for at least 6 hours (overnight preferred).
- Before serving, run a knife around the edges and slice gently. Top with remaining strawberry sauce or fresh strawberries if desired.
Notes
Cheesecake is better when made a day ahead. To avoid cracks, use a water bath for baking and cover with sauce if cracks occur.
