- 2 pounds boneless, skinless chicken thighs
- 1/4 cup olive oil
- 2 cloves garlic, minced
- 1 tablespoon ground cumin
- 1 tablespoon ground coriander
- 1 tablespoon ground paprika
- 1 teaspoon ground turmeric
- 1 teaspoon ground cinnamon
- 1/2 teaspoon cayenne pepper
- Salt and pepper to taste
- Juice of 1 lemon
- Pita bread, for serving
- Toppings: tahini, cucumber, tomato, onion, parsley
Instructions
- In a large bowl, combine olive oil, garlic, cumin, coriander, paprika, turmeric, cinnamon, cayenne, salt, pepper, and lemon juice to create a spice mixture.
- Add the chicken thighs to the slow cooker and coat them evenly with the spice mixture.
- Cover the slow cooker and cook on low for 6-8 hours, or high for 3-4 hours, until the chicken is tender and easily shredded.
- Once cooked, shred the chicken with two forks.
- Serve the chicken in pita bread with your choice of toppings such as tahini, cucumber, tomato, onion, and parsley.
Notes
Feel free to customize your toppings based on personal preferences. Chicken thighs are recommended for juiciness, but breasts can be used if preferred.
