Description

A comforting Mediterranean twist on classic meatloaf, combining seasoned ground beef and fresh herbs, topped with a tangy garlic herb yogurt sauce.


Ingredients

  • 1 lb ground beef (80% lean)
  • 1 large egg, beaten
  • 1/2 cup breadcrumbs
  • 2 Tbsp olive oil
  • 1/2 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1/4 cup chopped fresh parsley
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 1/2 cup Greek yogurt
  • 1 Tbsp lemon juice
  • 1 Tbsp lemon zest
  • 1 clove garlic, finely minced
  • Pinch of salt


Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, mix beef, egg, breadcrumbs, olive oil, onion, garlic, parsley, cumin, oregano, salt, and pepper. Do not overmix—just mix until everything is combined.
  3. Form the mixture into a loaf and place it in a greased loaf pan or on a lined baking sheet.
  4. Bake for about 45 minutes or until the internal temperature reaches 160°F.
  5. While the meatloaf is baking, prepare the sauce: whisk together Greek yogurt, lemon juice, lemon zest, garlic, and a pinch of salt.
  6. Once the meatloaf is done, let it rest for 10 minutes before slicing.
  7. Serve with the garlic herb sauce drizzled over the top or on the side.

Notes

For a leaner option, you can substitute ground turkey or chicken. Leftovers can be stored in an airtight container in the refrigerator for up to three days.
