A comforting Mediterranean twist on classic meatloaf, combining seasoned ground beef and fresh herbs, topped with a tangy garlic herb yogurt sauce.

- 1 lb ground beef (80% lean)
- 1 large egg, beaten
- 1/2 cup breadcrumbs
- 2 Tbsp olive oil
- 1/2 cup finely chopped onion
- 2 cloves garlic, minced
- 1/4 cup chopped fresh parsley
- 1 tsp ground cumin
- 1 tsp dried oregano
- Salt and pepper to taste
- 1/2 cup Greek yogurt
- 1 Tbsp lemon juice
- 1 Tbsp lemon zest
- 1 clove garlic, finely minced
- Pinch of salt
Instructions
- Preheat oven to 350°F (175°C).
- In a bowl, mix beef, egg, breadcrumbs, olive oil, onion, garlic, parsley, cumin, oregano, salt, and pepper. Do not overmix—just mix until everything is combined.
- Form the mixture into a loaf and place it in a greased loaf pan or on a lined baking sheet.
- Bake for about 45 minutes or until the internal temperature reaches 160°F.
- While the meatloaf is baking, prepare the sauce: whisk together Greek yogurt, lemon juice, lemon zest, garlic, and a pinch of salt.
- Once the meatloaf is done, let it rest for 10 minutes before slicing.
- Serve with the garlic herb sauce drizzled over the top or on the side.
Notes
For a leaner option, you can substitute ground turkey or chicken. Leftovers can be stored in an airtight container in the refrigerator for up to three days.
