Description

A delightful Mediterranean Breakfast Sandwich that brings together the freshness of spinach, creamy feta, and eggs, all nestled between slices of whole grain bread.


Ingredients

  • 2 eggs
  • 1/4 cup feta cheese
  • 1 tomato, sliced
  • 1/2 cup fresh spinach
  • 2 slices of whole grain bread
  • Olive oil
  • Salt and pepper to taste


Instructions

  1. Heat a small amount of olive oil in a skillet over medium heat.
  2. Crack the eggs into the skillet and scramble until fully cooked.
  3. Add the spinach and cook until wilted.
  4. Season with salt and pepper.
  5. Toast the bread slices.
