Description

Delicious pancakes infused with the essence of churros, featuring a sweet cinnamon sugar coating.


Ingredients

  • 1 cup all-purpose flour
  • 1 tablespoon granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup buttermilk (or regular milk)
  • 1 large egg
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1 tablespoon ground cinnamon, for dusting
  • 2 tablespoons sugar, for dusting


Instructions

  1. In a mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.
  2. In another bowl, combine the buttermilk, egg, melted butter, and vanilla extract.
  3. Pour the wet mixture into the dry ingredients, folding gently until the batter just combines; a few lumps are fine.
  4. Let the batter rest while heating a skillet or griddle to medium heat.
  5. Grease the griddle with butter or oil, and pour about 1/4 cup of batter for each pancake.
  6. Cook until bubbles form on the surface, then flip to cook the other side until golden brown.
  7. Mix cinnamon and sugar in a shallow dish.
  8. While pancakes are still warm, toss them in the cinnamon sugar to coat.
  9. Serve warm, and drizzle with maple syrup if desired.

Notes

You can make these pancakes ahead of time and reheat them. Adjust the heat to prevent burning while cooking.
