Ingredients

- 1 cup all-purpose flour
- 1 tablespoon granulated sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup buttermilk (or regular milk)
- 1 large egg
- 2 tablespoons unsalted butter, melted
- 1 teaspoon vanilla extract
- 1 tablespoon ground cinnamon, for dusting
- 2 tablespoons sugar, for dusting
Instructions
- In a mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.
- In another bowl, combine the buttermilk, egg, melted butter, and vanilla extract.
- Pour the wet mixture into the dry ingredients, folding gently until the batter just combines; a few lumps are fine.
- Let the batter rest while heating a skillet or griddle to medium heat.
- Grease the griddle with butter or oil, and pour about 1/4 cup of batter for each pancake.
- Cook until bubbles form on the surface, then flip to cook the other side until golden brown.
- Mix cinnamon and sugar in a shallow dish.
- While pancakes are still warm, toss them in the cinnamon sugar to coat.
- Serve warm, and drizzle with maple syrup if desired.
Notes
You can make these pancakes ahead of time and reheat them. Adjust the heat to prevent burning while cooking.
