Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup pineapple chunks, drained
  • 1/2 cup red bell pepper, diced
  • 1/4 cup green onions, sliced
  • 1/2 cup celery, diced
  • 1/2 cup Greek yogurt
  • 1/4 cup mayonnaise
  • 1 tablespoon honey
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Lettuce leaves for serving


Instructions

  1. Shred the cooked chicken and place it in a large mixing bowl.
  2. Chop the red bell pepper, green onions, and celery, and add them to the bowl with the chicken.
  3. In a separate bowl, whisk together Greek yogurt, mayonnaise, honey, apple cider vinegar, garlic powder, salt, and pepper.
  4. Pour the dressing over the chicken and veggies, mixing gently to coat.
