A warm and comforting garlic potato soup that combines fresh and roasted garlic flavors for a creamy and satisfying meal.

- 1 small onion, diced
- 2 tbsp extra virgin olive oil
- 4 garlic cloves, minced
- 1 tsp salt, divided
- 4 cups vegetable broth
- 4 large potatoes, peeled and cut into large pieces
- 1 large head roasted garlic
- 1 tbsp fresh chopped parsley
- 1/4 tsp freshly ground black pepper

- Grated cheese
- Chopped parsley
Instructions
- Heat olive oil in a medium pot over medium heat, add onion and a pinch of salt, cooking until translucent (6-8 min).
- Add minced garlic, cooking just until fragrant (30 sec to 1 min).
- Pour in vegetable broth, add potatoes, bring to a simmer, and reduce heat, cooking until potatoes are tender (15-20 min).
- Mash roasted garlic cloves in a bowl.
- Remove a cup of broth, then blend the soup until mostly smooth.
- Stir in mashed roasted garlic and reserved broth.
- Season with salt and pepper, adjusting to taste.
- Finish with chopped parsley, and serve topped with croutons, grated cheese, and extra parsley.
Notes
Feel free to customize with additional vegetables or spices as desired. This soup can be made ahead and stored in the refrigerator for up to 3 days or frozen for up to 3 months.
