Ingredients

- 1 head Cauliflower
- 8 ounces Mushrooms (Cremini or button mushrooms)
- 3 cloves Garlic
- 2 tablespoons Olive Oil
- 1 cup Vegetable Broth
- to taste Salt
- to taste Pepper
- 1 teaspoon Red Pepper Flakes (Optional)
- 2 tablespoons Butter
- 1 tablespoon Lemon Juice (Optional)
- to taste Fresh Herbs (Optional)
Instructions
- Heat a large skillet over medium-high heat, add olive oil and butter, let the butter foam and the oil shimmer.
- Add the mushrooms, spread them out, and let them brown without stirring too much for about 6 to 8 minutes. Season lightly with salt and remove from pan.
- Add cauliflower florets to the skillet, toss to pick up browned bits, then pour in the vegetable broth and season with salt and pepper. Cover and steam for 8 to 10 minutes until tender.
- Uncover, increase heat to medium, return mushrooms to the pan, add remaining butter and minced garlic to the cleared space. Cook for 30 to 60 seconds until fragrant.
- Stir in red pepper flakes and lemon juice, adjust seasoning, scatter fresh herbs, and finish with olive oil or butter. Serve hot.
Notes
Use fresh or frozen cauliflower, and adjust cooking times accordingly. It’s a great make-ahead option for busy weeknights.
