A comforting and easy soup made with rotisserie chicken, mushrooms, and heavy cream for a rich flavor.
Ingredients

- 1 rotisserie chicken, shredded
- 2 cups mushrooms, sliced
- 1 onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 2 tablespoons olive oil
- 1 teaspoon thyme
- Salt and pepper to taste
- Chopped parsley for garnish
Instructions
- In a large pot, heat olive oil over medium heat.
- Add the diced onion and sauté until translucent.
- Add the minced garlic and sliced mushrooms, cooking until the mushrooms are tender.
- Pour in the chicken broth and bring to a simmer.
- Stir in the shredded rotisserie chicken and thyme, and let it simmer for about 10 minutes.
- Reduce heat and add the heavy cream, stirring until well combined.
- Season with salt and pepper to taste.
- Serve hot, garnished with chopped parsley.
Notes
For a vegan version, replace the chicken with chickpeas or lentils, use vegetable broth, and substitute heavy cream with coconut milk.
