- 1 lb Ground Beef
- 1 medium Onion, chopped
- 2 cloves Garlic, minced
- 4 cups Beef Broth
- 14.5 oz Diced Tomatoes
- 1 cup Corn
- 15 oz Black Beans, drained and rinsed
- 3 medium Potatoes, peeled and cubed
- 2 tbsp Smoked Paprika
- 1 tbsp Chili Powder
- 1 tsp Cumin
- 1 tsp Salt
- 1 tsp Black Pepper
- 1 cup Heavy Cream
- 1 cup Shredded Cheddar Cheese
- 2 tbsp Green Onions, sliced
- 1 cup Tortilla Chips
Instructions
- In a heavy-bottomed pot, heat ground beef over medium heat, breaking it up as it cooks.
- Drain excess fat and add chopped onion; sauté until softened.
- Add minced garlic and cook for another minute.
- Stir in smoked paprika, chili powder, cumin, salt, and black pepper, letting them toast for a minute.
- Add diced tomatoes and beef broth, scraping browned bits from the pot.
- Stir in cubed potatoes, corn, and black beans; simmer for 15-20 minutes until potatoes are fork-tender.
- Once tender, stir in heavy cream and simmer for another 3-4 minutes.
- Adjust seasoning to taste, then mix in shredded cheddar cheese until melted.
- Serve topped with sliced green onions and tortilla chips.
Notes
Feel free to substitute chicken for beef or use a lighter cream alternative. This soup freezes well for future meals.
