Cottage Cheese Breakfast Tacos

Quick and easy breakfast tacos filled with creamy cottage cheese, scrambled eggs, and fresh toppings for a delightful start to your day.


Ingredients

  • 1/2 cup cottage cheese
  • 2 small flour tortillas
  • 2 large eggs
  • 1 tablespoon olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup diced tomatoes
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup shredded cheddar cheese
  • 1 tablespoon sour cream
  • 1/2 small avocado


Instructions

  1. Heat a nonstick skillet over medium heat.
  2. Add olive oil and warm for about 30 seconds.
  3. Crack and beat eggs in a bowl, then pour into the skillet. Cook and stir gently until scrambled.
  4. Season with salt and black pepper. Set aside.
  5. Warm tortillas in the skillet for about 30 seconds on each side.
  6. Place scrambled eggs in the center of each tortilla.
  7. Top with cottage cheese, diced tomatoes, chopped cilantro, and shredded cheddar cheese.
  8. Slice avocado and fan over the tacos.
  9. Add a dollop of sour cream on each taco.
  10. Serve immediately while warm.

Notes

Keep eggs soft and fluffy by removing them from heat just before fully cooked. Warm tortillas enough to soften for easy rolling.
