- 1/2 cup cottage cheese
- 2 small flour tortillas
- 2 large eggs
- 1 tablespoon olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup diced tomatoes
- 1/4 cup chopped fresh cilantro
- 1/4 cup shredded cheddar cheese
- 1 tablespoon sour cream
- 1/2 small avocado
Instructions
- Heat a nonstick skillet over medium heat.
- Add olive oil and warm for about 30 seconds.
- Crack and beat eggs in a bowl, then pour into the skillet. Cook and stir gently until scrambled.
- Season with salt and black pepper. Set aside.
- Warm tortillas in the skillet for about 30 seconds on each side.
- Place scrambled eggs in the center of each tortilla.
- Top with cottage cheese, diced tomatoes, chopped cilantro, and shredded cheddar cheese.
- Slice avocado and fan over the tacos.
- Add a dollop of sour cream on each taco.
- Serve immediately while warm.
Notes
Keep eggs soft and fluffy by removing them from heat just before fully cooked. Warm tortillas enough to soften for easy rolling.
