Delicious and easy-to-make cheesecake cups layered with cookie butter and a crunchy cookie crust.

- 8 ounces cream cheese, softened
- 1/2 cup sugar
- 1 teaspoon vanilla extract
- 1 cup whipped cream
- 1/2 cup cookie butter
- 1 cup crushed cookies (such as graham crackers or digestive biscuits)
- 4 tablespoons melted butter
Instructions
- In a mixing bowl, beat the softened cream cheese, sugar, and vanilla extract until smooth.
- Fold in the whipped cream and cookie butter until well combined.
- In another bowl, mix the crushed cookies with melted butter until the mixture resembles wet sand.
- In serving cups, layer the cookie crust at the bottom, followed by the cheesecake mixture.
- Repeat the layers until the cups are full and finish with a dollop of whipped cream on top.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
These cheesecake cups can be made in advance and stored in the fridge. Feel free to experiment with different cookie types for the crust.
