Ingredients

  • 3/4 cup plain flour
  • 1/2 cup packed brown sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 6 tablespoons unsalted butter, melted
  • 1/3 cup honey
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup mix-ins (chocolate chips or chopped nuts)


Instructions

  1. Preheat the oven to 350°F and line an 8×8 inch pan with parchment, leaving an overhang. Butter the parchment lightly.
  2. In a large bowl, combine oats, flour, brown sugar, baking powder, and salt.
  3. In a smaller bowl, whisk melted butter with honey, then whisk in egg and vanilla until glossy.
  4. Pour the wet mixture into the dry and stir until moistened, then fold in mix-ins.
  5. Transfer to the prepared pan, pressing evenly with a spoon.
  6. Bake for 20 to 24 minutes, checking at 18 minutes for doneness.
  7. Let cool in the pan for 20 minutes before lifting out and slicing into bars.
