- 3/4 cup plain flour
- 1/2 cup packed brown sugar
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 6 tablespoons unsalted butter, melted
- 1/3 cup honey
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup mix-ins (chocolate chips or chopped nuts)
Instructions
- Preheat the oven to 350°F and line an 8×8 inch pan with parchment, leaving an overhang. Butter the parchment lightly.
- In a large bowl, combine oats, flour, brown sugar, baking powder, and salt.
- In a smaller bowl, whisk melted butter with honey, then whisk in egg and vanilla until glossy.
- Pour the wet mixture into the dry and stir until moistened, then fold in mix-ins.
- Transfer to the prepared pan, pressing evenly with a spoon.
- Bake for 20 to 24 minutes, checking at 18 minutes for doneness.
- Let cool in the pan for 20 minutes before lifting out and slicing into bars.
