Instructions
- Preheat oven to 350°F (175°C) and line an 8×8 inch pan with parchment paper.
- Cream together the butter and brown sugar until smooth.
- Beat in the egg and vanilla extract until combined.
- In a separate bowl, whisk together flour, salt, baking powder, cinnamon, and nutmeg.
- Fold the dry ingredients into the butter mixture and stir in grated carrots.
- In another bowl, beat cream cheese, granulated sugar, and egg yolk until silky smooth.
- Spread two-thirds of the carrot batter into the prepared pan, then top with the cream cheese mixture.
- Drop spoonfuls of the remaining carrot batter over the cream cheese and swirl gently.
- Bake for 28 to 34 minutes, checking for a slight wobble in the center.
- Cool for at least 30 minutes before slicing; refrigerating for an hour is recommended.
Notes
Dust with powdered sugar before serving for an extra touch of sweetness. Can be stored in the refrigerator for up to a week or frozen for three months.
