Ingredients

  • 1 cup light brown sugar
  • 0.5 teaspoon kosher salt
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 0.5 teaspoon baking powder
  • 1 large egg
  • 0.5 cup unsalted butter
  • 1 cup freshly grated carrots
  • 4 ounces cream cheese (softened)
  • 1 large egg yolk
  • 0.5 cup granulated sugar


Instructions

  1. Preheat oven to 350°F (175°C) and line an 8×8 inch pan with parchment paper.
  2. Cream together the butter and brown sugar until smooth.
  3. Beat in the egg and vanilla extract until combined.
  4. In a separate bowl, whisk together flour, salt, baking powder, cinnamon, and nutmeg.
  5. Fold the dry ingredients into the butter mixture and stir in grated carrots.
  6. In another bowl, beat cream cheese, granulated sugar, and egg yolk until silky smooth.
  7. Spread two-thirds of the carrot batter into the prepared pan, then top with the cream cheese mixture.
  8. Drop spoonfuls of the remaining carrot batter over the cream cheese and swirl gently.
  9. Bake for 28 to 34 minutes, checking for a slight wobble in the center.
  10. Cool for at least 30 minutes before slicing; refrigerating for an hour is recommended.

Notes

Dust with powdered sugar before serving for an extra touch of sweetness. Can be stored in the refrigerator for up to a week or frozen for three months.
