Breakfast Grilled Cheese

Description

A comforting breakfast grilled cheese with savory sausage and fluffy scrambled eggs, layered with melty cheese between buttery sourdough bread.


Ingredients

  • 1/2 pound ground breakfast sausage
  • 6 large eggs, beaten
  • 8 slices Colby-Jack cheese
  • 4 tablespoons soft butter, divided
  • 8 slices sourdough bread


Instructions

  1. In a non-stick skillet, cook the ground sausage until no longer pink. Transfer to a paper towel-lined bowl and set aside.
  2. In the same skillet, melt 2 tablespoons of butter over medium-high heat. Add the beaten eggs and scramble until just set. Remove from heat.
  3. Combine the cooked sausage and scrambled eggs in the bowl.
  4. Butter one side of each slice of sourdough bread. Place one slice in the skillet, butter-side down. Top with a slice of cheese, followed by a generous scoop of the egg-sausage mixture, another slice of cheese, and finally another piece of bread, butter-side up.
  5. Grill until golden brown on both sides, about 3-4 minutes each side.
  6. Serve immediately.

Notes

Feel free to experiment with different types of cheese or bread to suit your taste. Serve with a side salad or fruit for balance.
