Description

Indulge in the sweet, earthy combination of fresh blackberries and crunchy pistachios with these easy-to-make dream bars, perfect for any busy weeknight.


Ingredients

  • 1 cup All-Purpose Flour (or gluten-free flour)
  • 1/2 cup Unsalted Butter (cold and cubed)
  • 1/4 cup Granulated Sugar
  • 1/4 teaspoon Salt
  • 1 large Egg Yolk
  • 2-4 tablespoons Ice Water
  • 2 cups Fresh Blackberries (or raspberries/blueberries)
  • 1/2 cup Granulated Sugar (adjust as necessary)
  • 1 tablespoon Lemon Juice
  • 2 tablespoons Cornstarch
  • 1/2 cup Light Brown Sugar
  • 1 teaspoon Baking Powder
  • 1 cup Pistachios (shelled and unsalted)
  • 1/2 cup Unsalted Butter (cold and cubed)
  • 1 large Egg
  • 1 teaspoon Vanilla Extract


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine the flour, butter, sugar, and salt, blending until slightly crumbly.
  3. Add the egg yolk and 2 tablespoons of ice water, mixing gently until the dough starts to come together.
  4. Press the dough firmly into the bottom of an 8×8 inch baking dish.
  5. For the filling, combine blackberries, sugar, lemon juice, and cornstarch in a bowl, gently folding to coat the fruit, and set aside.
  6. Bake the crust in the preheated oven for about 15-20 minutes, or until it is lightly golden.
  7. While the base is baking, prepare the topping by mixing the brown sugar, baking powder, chopped pistachios, remaining butter, egg, and vanilla extract in a mixing bowl.
  8. After the crust is baked, pour the berry mixture over it evenly, then spread the pistachio topping on.
  9. Bake for an additional 30-35 minutes or until the topping is set and lightly browned.
  10. Allow to cool completely before slicing into bars.

Notes

Feel free to substitute the blackberries with other berries like raspberries or blueberries. Adjust sweetness in the filling according to personal taste.
